Chondroitin sulfate(CS) is a kind of glycosaminoglycans covalently linked to proteins to form proteoglycans. Chondroitin sulfate is widely distributed in the extracellular matrix and cell surface of animal tissues. The sugar chain is polymerized by alternating glucuronic acid and N-acetylgalactosamine, and connected to the serine residue of core protein through a sugar like link region. Although the main chain structure of polysaccharide is not complex, it shows a high degree of heterogeneity in terms of the degree of sulfation, sulfate groups and the distribution of the two differences to the chain of isoglucuronic acid. The fine structure of chondroitin sulfate determines the functional specificity and interaction with a variety of protein molecules.

CS is an acidic mucopolysaccharide extracted from animal tissues, which is white or off white powder; Odorless. The aqueous solution of this product is viscous and does not condense when heated. This product is easily soluble in water and insoluble in organic solvents such as ethanol, acetone and ether. Its salts are relatively stable to heat and will not be damaged when heated to 80 ℃. Chondroitin sulfate aqueous solution is unstable in case of high temperature or acid. It is mainly deacetylated or degraded into monosaccharides or polysaccharides with small molecular weight. The degradation degree of CS under acidic, alkaline and neutral conditions is expressed by the UV absorbance value at 232nm. The greater the UV absorbance value, the greater the degradation degree, thus reflecting the stability of CS under different conditions.

Chondroitin sulfate is widely found in human and animal cartilage. Its pharmaceutical preparations mainly contain two isomers of chondroitin sulfate A and chondroitin sulfate C. The content of chondroitin sulfate in cartilage of animals of different varieties and ages is different.
