Sunflower seed protein is the defatted sunflower seed cake was used as the raw material to remove the shell, chlorogenic acid, caffeic acid and other phenolic acid compounds. The main component is globulin (about 70% ~ 79%), followed by albumin and a small amount of gluten and gliadin. In amino acid composition, lysine content is low, while other essential amino acids content is high. Domestic sunflower seed kernel contains 21% ~ 30% protein, and sunflower seed cake after oil extraction generally contains more than 50% protein.

The content of globulin in sunflower seed protein is 55% ~ 60%, albumin is 17% ~ 23%, gliadin is 1% ~ 4%, glutenin is 11% ~ 17%. The bound non protein nitrogen and insoluble residue were lower than 11% of total nitrogen. The solubility of sunflower seed protein in aqueous solution, salt solution and ethanol solution was 20%, 50% ~ 60% and 3% respectively.

Qualitative analysis by gel chromatography, ultrafiltration and electrophoresis showed that the molecular weight of sunflower seed protein ranged from 10 to 450kda. The molecular weight of the main components was 125kda, while the average molecular weight was 180kda. It contained 6 to 7 protein components. It was found that sunflower seed protein was mainly composed of two components: 7 ~ 8s and 11 ~ 12s. The isoelectric point of sunflower seed protein is pH4.0. The chemical composition of sunflower seeds varies according to the variety and growth environment. The domestic sunflower kernel usually contains 40% ~ 68% fat, 21% ~ 30% protein, 2.0% ~ 6.5% carbohydrate, 6.0% crude fiber and 3.2% ~ 5.4% ash.

Health Benefits

Sunflower seed protein has good water absorption, oil absorption, emulsification and foaming properties. Sunflower seed powder can absorb 170% water and 208% oil, and its oil absorption is higher than that of soybean protein. Sunflower seed protein concentrate and protein isolate have similar foaming and stirring properties to fresh egg white.

In the amino acid composition of sunflower seed protein, the content of lysine is higher than that of cereal protein, but slightly lower than that of soybean protein and animal protein. Other amino acids have good balance. Compared with FAO value, except lysine content, other essential amino acids were higher or similar to FAO value, so lysine was the first limiting amino acid of sunflower seeds. Although the lysine content is low, its effective lysine content can be as high as 90%. Sunflower seed protein is rich in sulfur-containing amino acids such as methionine. Compared with most plant proteins, sunflower seed protein has good digestibility (90%) and high biological value (60%).

It is a good additive for infant food. Compared with soybean protein, the content of lysine in sunflower seed protein was lower, but the content of methionine was higher. The combination of sunflower seed protein and soybean protein, added to infant food, can play a role in nutritional fortification. Sunflower seed protein can also be used in general food.
